Most coffee is roasted the same way it has been for over a century: tumbling inside a hot steel drum. Beans bounce against metal. Smoke and chaff stay in the chamber. The result is often a cup that tastes more like the roast than the bean.
At 248 Roasters we do it differently.
We use high-velocity air roasting (also called fluid-bed roasting). Forced hot air suspends the beans so they never touch metal. Smoke and chaff are instantly separated from the roasting chamber. What remains is pure, single-origin flavor—bold, clean, and free of burnt aftertaste.
This is not a gimmick. It is engineering applied to coffee.
What Is Air Roasting?
Air roasting suspends green coffee beans in a powerful stream of heated air. The beans float and tumble freely while the hot air itself delivers the heat through pure convection.
Traditional drum roasting relies on conduction (beans contacting hot metal) plus some convection. That metal contact creates hot spots and allows chaff (the thin papery skin that flakes off during roasting) to scorch inside the chamber. Scorched chaff produces smoke and bitterness that transfer into the finished coffee.
In an air roaster the same airflow that heats the beans also lifts the chaff away immediately. The result is a cleaner roast environment and a cleaner cup.
How Our Process Works
